About Premier Candy

Premier Candy is the confectionery manufacturing division of the Premier Group — producing a range of candy and confectionery products from the Tunney facility in Gauteng. As part of Premier Group’s diversified FMCG portfolio (which also includes BRB bakeries, milling, and Lil-Lets SA), Premier Candy operates its own quality management system in compliance with food safety and customer quality standards.

Purpose of the Role

The Quality Controller assists the company in achieving production targets by ensuring all manufactured products meet company and customer quality specifications — through sampling, measurement, analysis, and verification against predetermined standards across the full production cycle.

Key Responsibilities – Quality Controller

Pre-Production Checks

  • Conduct hygiene checks at entrance doors as staff come in — visually verifying correct safety procedures are followed and recording on the hygiene checklist
  • Conduct housekeeping checks prior to product production — recording results on the housekeeping checklist
  • Conduct start-up calibration checks — verifying all instruments are correct and in good working order to ensure accurate results
  • Test and verify scales are working correctly
  • Verify metal detectors prior to production — confirming they are in good working order
  • Conduct line clearance verification at packaging areas
  • Verify glass, cleaning, small utensils, and blades registers and check conveyor integrity
  • Verify the process control sheet — ensuring the correct version is in use

In-Process Checks

  • Periodically conduct temperature and humidity checks — ensuring readings are correct for the product being produced
  • Conduct weekly black checks to identify foreign objects — taking photos, investigating, and documenting findings

Final Product Inspection

  • Conduct final product inspection — assessing texture, size, appearance, printing, and other visual/taste attributes against specification
  • Check the age of product on the production floor — ensuring product has not exceeded the permitted period before packaging
  • Draft Non-Conformances (NCRs) for products sitting on the production floor longer than required
  • Categorise products after final inspection: on hold, ready for packaging, or rejected
  • Complete the QC on hold/reject register and raise NCRs accordingly

Minimum Requirements – Quality Controller

  • Matric — essential
  • 3 years’ experience in an FMCG Quality Control role — essential

Competencies

  • Office management and systems knowledge
  • Attention to detail
  • Communication — verbal and written
  • Teamwork

Why Join Premier as Quality Controller at Premier Candy?

  • Confectionery QC Specialisation — Quality control in confectionery manufacturing is a distinct FMCG QC specialisation — covering sugar confectionery, texture management, temperature and humidity sensitivity, and product appearance standards that differ from bakery or dairy QC environments. Premier Candy QC experience is valued across Tiger Brands, Nestlé, Mondelēz, and other confectionery FMCG employers
  • Tunney, Gauteng — A well-located Gauteng industrial area accessible from the East Rand, Johannesburg East, and surrounding residential areas
  • Non-Conformance Management — The Quality Controller’s responsibility for drafting NCRs and maintaining the QC hold/reject register provides formal quality management documentation experience — a key competency for advancement into senior QC, quality assurance, and food safety management roles
  • Third Distinct Premier Division in This Batch — Premier Candy (confectionery) joins BRB bakeries and Lil-Lets SA (HPC) as the third different Premier Group business unit featured in this batch — confirming that Premier Group opportunities span far beyond bread and milling

Career Growth Path – Quality Control & Assurance

  • Quality Controller → Senior Quality Controller
  • Senior QC → Quality Assurance Supervisor
  • QA Supervisor → Quality Manager
  • Quality Manager → Head of Quality / Food Safety Manager

Frequently Asked Questions – Quality Controller FMCG Jobs Gauteng

What is a Non-Conformance Report (NCR) and when does a QC raise one? An NCR (Non-Conformance Report) is a formal quality management document raised when a product, process, or material fails to meet a specified standard. At Premier Candy, the Quality Controller raises an NCR when a final product inspection identifies a quality failure (wrong texture, incorrect appearance, printing defect) or when product has been on the production floor longer than the permitted holding period. The NCR triggers an investigation, a disposition decision (rework, regrade, or rejection), and a corrective action — creating a documented quality audit trail.

What is a “black check” in FMCG quality control? A black check (also called a black light inspection or UV check) is a quality control procedure using ultraviolet light to detect foreign objects, contamination, or surface conditions that are invisible under normal lighting — including certain types of foreign material, contamination marks, or surface defects. In confectionery and food production, weekly black checks are a standard preventive food safety measure, particularly for detecting glass, certain plastics, and contamination in production areas.

What does “line clearance” involve and why does the QC verify it? Line clearance is the formal procedure performed before starting a new production run — verifying that the packaging line, production equipment, and work area are free from all materials, labels, and product from the previous run. This prevents cross-contamination and product mix-ups (particularly important when different flavours, SKUs, or allergen profiles are produced on the same line). The Quality Controller verifies line clearance is complete before authorising production start — a critical food safety and product integrity function.

How does this Premier Candy Quality Controller post differ from the bakery production posts in this batch? All BRB bakery posts (Aeroton, Cape Town) are production roles — focused on manufacturing, packing, and operations. The Premier Candy Quality Controller is a quality assurance function — sitting above production as the independent verification authority that accepts, holds, or rejects product. It also differs from the bakery division in product type (confectionery vs bread) and production environment (temperature and humidity control for sugar confectionery vs hot baking conditions). Candidates with FMCG QC experience — particularly in food manufacturing — are the target profile.
