Bakery Production Shift Supervision and Operations Role
Premier FMCG is recruiting a skilled Production Supervisor to join its BRB Aeroton bakery site in Aeroton, Gauteng. This permanent, onsite role is responsible for supervising the production shift team tasked with manufacturing bread according to quality specifications, within planned timelines, and at optimal cost levels while maintaining bakery equipment and operational efficiency.
The Production Supervisor plays a vital role in coordinating shift operations, ensuring adherence to the bake plan, and supporting continuous improvement initiatives. This position is suited to experienced bakery professionals with strong supervisory skills and a commitment to quality, safety, and operational excellence within a high-volume FMCG environment.
About the Role
The Production Supervisor oversees the shift production team to ensure bread production is delivered on time and in full according to the bake plan. The role focuses on maintaining production efficiency, coordinating resources, and supporting equipment maintenance through autonomous maintenance and housekeeping practices.
The successful candidate will collaborate closely with maintenance and quality departments to maintain consistent product standards, manage non-conforming products, and drive a quality-focused production culture. Accurate recording of production KPIs and effective shift handovers are essential components of the role.
This position requires strong leadership, technical bakery knowledge, and the ability to operate in a pressurised production environment.
Production Coordination and Process Control
The Production Supervisor must ensure bread production is completed on time and in full according to bake plan requirements and quality specifications.
Shift production teams and supply chain areas must be coordinated to maintain optimal production flow and timeous delivery.
Autonomous maintenance and housekeeping activities must be coordinated during the shift in line with maintenance plans.
All production process KPIs and relevant information must be recorded accurately to support effective post-shift handovers to the Production Manager.
Quality and Baking Process Management
Adherence to baking process parameters is essential to ensure consistent high-quality products.
Process exceptions and variations must be identified and corrected promptly to maintain compliance.
Equipment-related deviations must be reported to the maintenance manager for corrective action.
Root cause analysis must be supported where necessary to address process or quality issues and restore process stability.
A quality mindset must be promoted within the production team in collaboration with the Quality Control department, particularly when addressing non-conforming products or customer complaints.
All production control documentation must be completed and controlled in accordance with SOPs to support recall and traceability requirements.
Team Leadership and Performance Management
The Production Supervisor must ensure adequate resourcing for each shift while managing absenteeism and leave schedules.
Coaching, guidance, and on-the-job training must be provided to support employees in meeting production targets.
INVOCOMs must be conducted regularly, with records maintained and action plans followed through.
Team performance must be managed in line with Premier standards, ensuring accountability and continuous improvement.
A collaborative approach must be maintained to support team morale and productivity.
Compliance, Safety and Continuous Improvement
Full compliance with health and safety and food safety standards must be maintained through training, observation, coaching, and SOP assessments.
Continuous improvement initiatives must be driven through implementation of team suggestions and reporting improvement opportunities.
Standard deviation tests must be conducted every four hours on dividers to ensure consistent dough weight and compliance with legal requirements.
Daily mass balance (moisture loss) tests must be performed to monitor consistency, with deviations recorded and corrected promptly.
Collaboration with other department heads and supervisors is required to maintain continuous operations and address team challenges.
Operational Collaboration and Problem Resolution
The Production Supervisor must liaise with other supervisors and department heads to maintain smooth operations.
Support must be sought to address team issues and resolve operational challenges effectively.
Continuous improvement ideas must be communicated appropriately to support operational development.
Qualifications and Experience
Matric with English as a subject is essential.
Chamber of Baking certificate is essential.
3–5 years of FMCG plant bakery production management experience within a plant producing a minimum of 5000 loaves per hour is required.
Skills and Competencies
Knowledge of bakery process quality requirements and standards.
Supervisory and leadership principles and practices.
Understanding of raw material functionality and quality, particularly flour.
Good housekeeping and hygiene practices.
Food safety and quality management system requirements.
Financial awareness supporting planning, budgeting, and cost control.
Performance management and disciplinary process knowledge.
Continuous improvement methodology understanding.
Basic PC literacy.
Production planning and resourcing capability.
Ability to implement and control baking process controls.
Analytical thinking and problem-solving ability.
Numerical and calculation skills related to capacity, efficiencies, and yields.
