Role Purpose
The Senior Catering Manager takes full accountability for the day-to-day catering operations within an acute hospital environment. This role is a strategic blend of culinary leadership, clinical compliance, and financial management. You will be responsible for ensuring that every meal served meets stringent healthcare regulations while maintaining the commercial viability of the contract. From managing complex patient diets to leading a large workforce, your leadership will define the standard of care for our clients and patients.
Key Areas of Responsibility
1. Operational Excellence & Strategic Leadership

Site Management: Oversee all catering functions across the acute healthcare site, ensuring seamless integration between kitchen production and ward service.

Tsebo Standards: Implement and maintain the “Tsebo Way,” focusing on continuous improvement initiatives and innovative service delivery.

Project Management: Manage multiple operational projects simultaneously, ensuring they are delivered on time and within the required quality benchmarks.
2. Compliance, Food Safety & Clinical Standards

Healthcare Regulations: Ensure 100% compliance with food safety (HACCP), hygiene, and specific healthcare legislation governing hospital catering.

Quality Assurance: Conduct rigorous internal audits and monitor quality control at every stage of the food lifecycle.

Dietary Management: Oversight of specialized meal production for acute patient needs, ensuring therapeutic accuracy.
3. Financial Management & Reporting

Budgetary Control: Manage the site’s full financial portfolio, including labor costs, food spend, and overheads.

Reporting: Generate detailed financial and operational reports, providing data-led insights to the regional leadership team.

Procurement: Optimize inventory control and leverage Tsebo’s procurement power to reduce costs and complexity.
4. Stakeholder & Team Development

Client Relations: Build and maintain high-level relationships with hospital management and clinical staff to ensure contractual obligations are exceeded.

People Development: Lead, mentor, and train catering teams, fostering a culture of accountability and professional growth.

Conflict Resolution: Use strong negotiation and influencing skills to manage stakeholder expectations and resolve operational challenges constructively.
Requirements & Competencies
Education & Qualifications

Degree/Diploma: Minimum of a Diploma or Degree in Hospitality Management or a closely related field.

Certification: Advanced knowledge of Food Safety standards and healthcare compliance is required.
Experience & Technical Skills

Management History: At least 5 years of experience in catering management, with a significant portion in a leadership role.

Healthcare Specialty: Essential: Proven experience managing catering services within an acute hospital environment.

Systems: Proficiency in catering management systems, inventory control tools, and financial software.
