The Food & Beverage (F&B) department at Wild Coast Sun plays a vital role in maintaining service standards, profitability, and guest satisfaction across its diverse restaurants, bars, and food outlets.

ROLE OVERVIEW

An exciting opportunity exists for a motivated and experienced F&B Floor Manager to join the Wild Coast Sun team. This role is ideal for a results-driven individual with strong leadership skills and a passion for the hospitality and F&B industry.

The F&B Floor Manager will be responsible for the effective management of F&B operations on a day-to-day basis, ensuring profitability, operational excellence, product enhancement, and outstanding guest service across various food and beverage outlets within the resort, including casino operations.

KEY RESPONSIBILITIES

Delivered F&B Plan Implementation

  • Align outlet objectives with the overall F&B strategy for Wild Coast Sun

  • Input into strategic objectives to achieve F&B business targets

  • Analyse F&B products, benchmark against industry trends, and manage risks

  • Facilitate marketing plans and food & beverage promotions aligned with BBBEE targets

Shift Management

  • Develop efficient staff schedules and allocate duties to maximise coverage

  • Lead daily shift briefings, handovers, and reports

  • Be actively present on the floor, assisting guests and resolving issues

  • Manage staff appearance, floor standards, and equipment functionality

  • Perform cash-ups and stock control procedures as per standard operating processes

Product Enhancement

  • Conduct competitor analyses and pricing comparisons

  • Review product performance and propose enhancements

  • Motivate and implement new product offerings

  • Track return on investment (ROI) and operational performance regularly

Standards and Governance

  • Monitor F&B operations for compliance with legislative and health standards

  • Implement control measures to mitigate financial and operational risks

  • Conduct weekly inspections of front and back-of-house areas

  • Encourage waste management practices and ensure staff are trained accordingly

People Management and Development

  • Lead, motivate, and support F&B teams to maintain high service standards

  • Identify training needs, coach, and develop staff competence

  • Participate in recruitment and succession planning aligned with EE targets

  • Performance manage outlet managers to ensure KPAs are achieved

  • Maintain positive labour relations and manage union engagements

Budget Management

  • Participate in budget forecasts and cost control measures

  • Oversee cost of sales reports, recipe standardisation, supplier pricing reviews

  • Monitor salary costs, absenteeism, staff productivity, and sales target achievements

  • Implement remedial actions where necessary to ensure profitability

Customer Relationship Management

  • Engage with guests, particularly VIPs, to resolve complaints and enhance satisfaction

  • Support VIP services and events within F&B operations

  • Communicate and uphold guest service standards across all outlets

Stakeholder Relationship Management

  • Maintain effective communication with internal and external stakeholders

  • Address non-conformance issues and operational concerns proactively

  • Ensure operational effectiveness through clear communication and service provider alignment

QUALIFICATIONS AND EXPERIENCE REQUIRED

  • 3-year Hotel School Diploma or equivalent National Diploma qualification

  • 5-6 years experience in the F&B industry, with at least 2 years in a supervisory role

  • F&B experience in a casino environment is advantageous

  • Strong knowledge of F&B costing, product knowledge, stock control, and operations

  • Technical expertise in wine, barista services, and speciality beverages

  • Intermediate computer literacy, Micros and Opera knowledge preferred
