ABOUT THE ROLE
The Food & Beverage Floor Manager plays a critical role in managing the day-to-day beverage operations and service at a busy outlet in Cape Town. You will be responsible for driving profitability, enhancing operational standards, maximising customer satisfaction, and ensuring facilities and products are maintained and enhanced in line with company standards.
This role demands a hands-on manager who can lead a dynamic team to consistently deliver exceptional guest experiences, align with corporate F&B strategy, and ensure all operational activities meet compliance and financial objectives.
KEY RESPONSIBILITIES
Business Plan Implementation
- Develop outlet objectives aligned with the Unit F&B strategy to meet business goals.
- Communicate and implement F&B deliverables across the outlet effectively.
- Conduct risk analyses on short-term profit margin impacts and strategise accordingly.
- Delegate authority clearly and hold team members accountable for deliverables.
- Manage and allocate people and operational resources efficiently.
- Coordinate communication of promotions and strategic plans to staff and stakeholders.
- Ensure alignment with Employment Equity, skills development, and procurement strategies contributing to BBBEE targets.
Shift Management
- Schedule staff and allocate duties for maximum operational coverage.
- Conduct shift briefings, handovers, and compile shift reports diligently.
- Maintain presence on the floor during service hours to assist guests, handle special requests, and resolve complaints.
- Oversee staff presentation, floor upkeep, and operational readiness of equipment.
- Manage stock control and equipment usage per SOPs.
- Perform cash-ups and complete shift documentation accurately.
Product Enhancement
- Collaborate with the F&B Operations Manager to analyse competitor beverage offerings and pricing in the market.
- Perform regular product performance reviews and recommend improvements or rationalisation.
- Drive innovation by motivating new product enhancements and managing project implementation plans.
- Monitor ROI and operational performance of beverage products continuously.
F&B Standards & Governance
- Monitor and uphold beverage standards and processes to comply with legislative health, hygiene, safety, and environmental regulations.
- Implement controls and checks to mitigate financial risks and enforce adherence to policies.
- Conduct weekly inspections of front and back of house areas to ensure compliance.
- Promote waste management culture and train staff accordingly.
- Collaborate with maintenance, finance, HR, and security teams to identify and address risks.
People Management and Development
- Manage employment conditions including attendance, leave, and policy compliance.
- Control productivity and payroll costs while identifying and addressing training needs.
- Provide on-the-job training, coaching, and development to build a strong succession pipeline.
- Handle employee relations and foster motivation through effective communication.
- Conduct performance reviews, resource talent, and onboard new employees.
Financial Management
- Participate in budgeting, forecasting, and financial controls.
- Consolidate capital expenditure (Capex) requirements for outlet improvements.
- Oversee the accuracy of Cost of Sales reports, recipe management, and procurement pricing reviews.
- Ensure accurate stock takes and manage variances to optimise cost control.
Customer Relationship Management
- Contribute to Customer Value Proposition (CVP) development based on unit strategy and guest feedback.
- Manage escalations and complaints professionally.
- Maintain frequent interaction with guests, including VIPs, and support VIP initiatives.
- Communicate customer standards within the department and monitor adherence.
Stakeholder Relationship Management
- Attend relevant meetings and keep department staff informed for effective operation.
- Liaise with internal and external service providers per SLA requirements.
- Communicate special guest or event requirements to other departments.
- Provide management with timely feedback on department performance and challenges.
REQUIREMENTS
Education
- 3-year Hotel School Diploma or equivalent National Qualification at Diploma level.
Experience
- 5-6 years’ experience in Food and Beverage, including a minimum of 2 years in a supervisory role.
- Experience in luxury hotel environments is advantageous.
Skills and Knowledge
- In-depth knowledge of Food & Beverage costing, product knowledge, and specialty beverages (wine, barista skills).
- Expertise in team planning, operational management, product development, and stock control.
- Intermediate computer skills; Micros and Opera systems preferred.
Work Conditions and Special Requirements
- Must be willing to work shifts as required by operational needs.
- Ability to move around the outlet, including use of aids if necessary.
- Physical capability to handle operating equipment.
- Flexibility to perform duties in alternative outlets when operationally required.
