Lead Kitchen Stations and Deliver Exceptional Culinary Experiences

InterContinental Table Bay Cape Town is looking for 5 skilled Chef De Partie to expertly manage designated kitchen sections, prepare high-quality dishes, and ensure excellent culinary standards in line with Sun International’s operational excellence.


Purpose of the Role

To supervise day-to-day kitchen operations within a specific section, ensuring the preparation, production, and presentation of exceptional food products. Maintain compliance with operational standards, health and safety regulations, and customer expectations.


Key Responsibilities

Kitchen Shift Supervision

  • Oversee mise-en-place and preparation for service.
  • Supervise chefs during service, ensuring quality dish creation and presentation aligned with guest orders or functions.
  • Identify equipment or system issues within the kitchen section.
  • Complete opening and closing checklists and registers.
  • Support and troubleshoot with the team to uphold professional standards.
  • Ensure adherence to kitchen SOPs, equipment storage, and health, safety, hygiene, and environmental standards.
  • Report faults to technical departments and housekeeping until resolved.
  • Conduct stock control and report variances.
  • Identify coaching needs and provide on-the-job training.

Food Preparation

  • Prepare mise-en-place and check station readiness per SOP.
  • Maintain cleanliness and functionality of the workstation.
  • Supervise daily preparation of menu items, including vegetables, sauces, salads, cold starters, and hot dishes.
  • Control food stock and costs in own section.
  • Monitor food stocks, report shortages, discard expired items, and maintain fridge organization.

People Supervision

  • Manage staff attendance, absenteeism, leave, and policy adherence.
  • Identify training needs and conduct coaching to develop talent.
  • Handle employee relations, communication, motivation, and performance reviews.
  • Assist with resource provision and onboarding new staff members.

Operations Control

  • Ensure safe use and storage of kitchen equipment, consumables, packaging, and chemicals.
  • Conduct food and equipment stock counts daily, reporting discrepancies.
  • Monitor food costs relative to revenue.
  • Follow culinary SOPs and comply with health, safety, hygiene, and environmental regulations.
  • Participate in stock takes and report breakages or anomalies promptly.

Delivered Customer Experience

  • Engage with guests during service to assist with requests, special requirements, and complaints resolution.
  • Monitor buffet standards and ensure courteous guest interaction.
  • Train staff on menu items, promotions, and product knowledge.
  • Take accurate guest orders at the buffet and ensure food presentation meets standards.

Requirements

  • Grade 12 certificate.
  • 2-Year Culinary Diploma or equivalent national qualification.
  • Membership with the South African Chef’s Association or relevant culinary accreditation.
  • Minimum 3 years culinary experience as a Commis Chef in a similar hotel or restaurant environment.
  • Ability to work operational shifts and physically manage kitchen equipment.
  • Flexibility to work across alternative outlets as needed.

Skills and Competencies

  • Strong teamwork and cooperation skills.
  • Ability to manage materials, including heavy and dangerous items.
  • Effective problem-solving and supervisory abilities.
  • Culinary product knowledge and cooking methodologies.
  • Understanding of food safety legislation, environmental standards, and waste management.
  • Competent in stock control and use/storage of kitchen operating equipment.
  • Proficient computer skills; experience with Micros/Opera preferred.
  • Excellent judgment based on sensory evaluation (taste, aroma, texture, colour).
