About the Role: Food and Beverage Manager

As the Food and Beverage Manager, you will be responsible for overseeing the entire food and beverage department, ensuring the delivery of exceptional service, operational excellence, and profitability. You will lead a team that strives to exceed guest expectations, ensuring every dining experience reflects the high standards of ANEW Hotels & Resorts.

This is a senior-level, hands-on role that requires excellent leadership, operational, and financial management skills. The ideal candidate will be customer-focused, organised, and driven to maintain the hotel’s reputation for outstanding service.

Minimum Requirements

  • Matric / Grade 12 (Essential)

  • A recognised Hospitality Management Certificate or Diploma (Advantageous)

  • Minimum of 5 years’ experience within the hospitality industry, specifically in a 4-star property

  • At least 18 months of management or supervisory experience in food and beverage operations

  • Proven ability to manage staff, maintain high service standards, and control costs

  • Strong knowledge of food and beverage operations, guest service excellence, and financial performance management

  • Working knowledge of Opera and Micros, particularly Point of Sale (POS) systems

  • High level of numeracy, organisational skills, and attention to detail

  • Excellent communication skills in English; proficiency in IsiZulu and/or IsiXhosa will be advantageous

  • Strong time management skills and the ability to work under pressure

  • Ability to work independently and lead a team effectively

  • A high degree of self-motivation, ambition, and a passion for the hospitality industry

Key Responsibilities

Operational Leadership and Financial Performance

  • Fully accountable for achieving the budgeted revenue and profit targets for the food and beverage outlets

  • Drive revenue growth while ensuring long-term sustainability of the department

  • Implement cost control measures to optimise profitability without compromising service quality

  • Ensure food and beverage offerings meet and exceed guest expectations and industry standards

  • Maintain operational efficiency across all outlets, including restaurants, bars, room service, and conference facilities

Guest Satisfaction and Service Excellence

  • Maintain high levels of guest satisfaction through exceptional service and quality control

  • Resolve guest complaints effectively and ensure feedback is actioned to enhance future experiences

  • Ensure food and beverage staff are well-trained, professional, and deliver consistent service

  • Collaborate with other hotel departments to ensure seamless service delivery and memorable guest experiences

Staff Management and Development

  • Oversee staffing levels to ensure operational needs are met while managing costs

  • Provide leadership, motivation, and direction to all food and beverage team members

  • Conduct regular training and development to maintain high service standards

  • Foster a positive work environment that promotes teamwork, accountability, and professional growth

Stock Control, Reporting, and Systems Management

  • Oversee the management of stock levels, including ordering, receiving, storage, and inventory control

  • Ensure adherence to hotel policies for stock rotation, quality checks, and waste management

  • Prepare and submit accurate reports related to food and beverage operations, revenue, and stock

  • Utilise Opera, Micros, and other hotel systems effectively to ensure accurate billing and reporting

Brand Standards and Compliance

  • Uphold the ANEW Hotels & Resorts brand standards across all food and beverage outlets

  • Ensure compliance with health, safety, and hygiene regulations

  • Maintain a high standard of cleanliness, presentation, and operational efficiency at all times

  • Participate in regular audits and implement corrective actions where necessary
