Job Overview:
The Service Manager will oversee the food and beverage service at a luxury Safari Lodge in Thabazimbi. This live-in role includes accommodation and meals on-site, with a 6-week on / 2-week off work cycle. The position requires responsibility for service, sales, expenses, and guest satisfaction, ensuring consistency in service delivery and handling guest complaints. The Service Manager will also handle beverage control, stock management, and staff training.
Key Responsibilities:
Food and Beverage Service:
- Maintain responsibility for service, sales, expenses, and profit goals, ensuring guest service and satisfaction.
- Supervise service and manage standards, ensuring staff are prepared with food/menu descriptions and wine pairing recommendations.
- Monitor staff and patron activities to ensure compliance with liquor regulations.
- Prepare and present beverages, train staff, and develop specialty drinks.
- Ensure optimal communication between the Kitchen and Service teams through daily meetings.
- Resolve guest complaints promptly.
Beverage Administration and Control:
- Manage guest service while maintaining beverage and service equipment inventory and financial controls.
- Estimate consumption based on forecasts, schedule orders, and verify delivery contents for quality and quantity.
- Review beverage menus, assign prices based on costs, and maintain POS operations effectively.
- Ensure the maintenance and repair of equipment such as refrigeration and ice machines.
Requirements – Qualifications and Skills:
- Qualifications:
- Knowledge of TallOrder/ResRequest (advantageous).
- In-depth understanding of F&B service, including local, regional, and international wines.
- Strong understanding of stock procedures, budgeting, and departmental administration.
- Skills:
- Excellent knowledge of beverages, food, and cooking methods.
- Understanding of hygiene standards and cleaning products.
- Strong leadership and team management skills.
- Ability to resolve guest complaints and maintain high service standards.
- Excellent communication, time management, and problem-solving abilities.
- Proactive, adaptable, and able to work accurately under pressure.
