Main Purpose of the Job:
The Catering Manager will be responsible for overseeing all food service-related activities, including managing the daily operations of the kitchen, implementing production processes, controlling food and labor costs, and ensuring compliance with HACCP standards.
Education and Experience Required:
- Relevant tertiary qualification in food and beverage services or culinary arts (compulsory).
- Minimum of 3 years of progressive kitchen management experience (compulsory).
- Experience working within budget guidelines to achieve results (compulsory).
- High-volume, complex foodservice operations experience is highly desirable.
Knowledge, Skills, and Competencies:
- Strong knowledge of the catering environment, from fine dining to restaurant dining.
- Understanding of South African and industry-specific laws.
- Excellent customer service and management skills.
- Strong communication and exceptional functions skills.
- Ability to manage budgets and reduce soft costs.
- Proficient in computer use.
Key Responsibilities:
- Oversee the daily operations of the assigned unit.
- Implement and manage production processes.
- Control and manage food and labor costs.
- Ensure full compliance with HACCP standards.
