We are looking for a dedicated Butchery Production Controller to oversee daily production operations, ensure process efficiency, and maintain the highest standards of quality. Purpose of the Role
The Butchery Production Controller will manage daily production activities, oversee meat preparation, utilise butchery equipment, monitor orders, and address day-to-day operational issues. This role includes:
- Overseeing meat carcass breaking, bandsaw cutting, mincing, and sausage filling.
- Conducting quality inspections and ensuring correct weighing, pricing, and dispatching of orders.
- Training and guiding the production team on equipment use and best practices.
- Liaising with store personnel to meet product requirements and coordinate pickups/deliveries.
Key Responsibilities
- Break down various meat carcasses according to specifications.
- Cut or portion meat using a bandsaw or knife.
- Operate grinding, mixing, and filling machines for mincing and sausage production.
- Maintain and clean all equipment and work areas to required standards.
- Weigh, package, and price meat orders accurately.
- Train production staff on equipment use and new product lines.
- Ensure cold chain management and oversee receiving of meat from suppliers.
- Monitor stock levels, apply FIFO principles, and minimise stock losses.
- Maintain full traceability of products throughout the production process.
- Oversee team timekeeping and attendance.
- Adhere to health, safety, and hygiene regulations, including PPE requirements.
Qualifications & Experience
- Grade 12 or equivalent qualification.
- At least 3 years of relevant experience, preferably in the FMCG retail industry.
- Strong knowledge of meat preparation techniques, cuts, and equipment.
- Experience in cold chain management, production planning, and quality control.
Key Competencies
- Ability to use hand tools and operate butchery machinery.
- Physically fit to work in cold environments and lift heavy items.
- Excellent problem-solving and analytical skills.
- High attention to detail and commitment to quality.
- Strong interpersonal and teamwork skills.
- Knowledge of meat cutting techniques, quality indicators, and hygiene standards.
