Role Overview: Assistant Food and Beverage Manager

As the Assistant Food and Beverage Manager, you will play a key leadership role in supporting the Food and Beverage Department to deliver outstanding service, meet financial targets, and ensure smooth day-to-day operations. You will work closely with the Food and Beverage Manager and hotel leadership team to oversee the quality of food and beverage service, manage staff performance, uphold standards, and drive profitability across all F&B outlets.

The ideal candidate is an organised, customer-focused hospitality professional with excellent leadership abilities and a strong background in food and beverage operations.

Minimum Requirements

  • Matric / Grade 12 certificate (Essential)

  • Relevant Hospitality Certificate or Hospitality Management Diploma (Advantageous)

  • Minimum of 3 years’ experience in the hospitality industry within a reputable 4-star property

  • At least 18 months of supervisory or management experience in a food and beverage environment

  • Strong knowledge of Food and Beverage operations and service standards

  • High level of numeracy with excellent organisational and cost control skills

  • Exceptional attention to detail, discipline, and ability to meet deadlines

  • Excellent communication skills in English; proficiency in IsiZulu and/or IsiXhosa is advantageous

  • High degree of self-motivation, ambition, and the ability to work both independently and as part of a team

  • Proficient time management skills and the ability to thrive in a fast-paced environment

  • Practical knowledge of Opera and Micros, particularly Point of Sale (POS) systems

Key Duties and Responsibilities

Operational Excellence and Service Delivery

  • Support the Food and Beverage Manager in overseeing daily operations across all F&B outlets, ensuring exceptional service standards

  • Contribute to creating a welcoming and efficient atmosphere for all guests, consistently exceeding customer expectations

  • Monitor F&B service delivery to maintain high-quality guest experiences, addressing guest concerns promptly and professionally

  • Lead by example, ensuring all employees project a positive attitude, professional image, and adhere to brand standards

Financial Management and Revenue Control

  • Assist in achieving budgeted revenue targets for all food and beverage outlets within the hotel

  • Take full accountability for financial performance within the department, implementing effective cost control measures

  • Ensure accurate stock management, inventory control, and procurement processes are in place

  • Monitor and analyse departmental budgets, costs, and profitability, taking corrective action where necessary

  • Ensure proper use of Point of Sale (POS) systems such as Opera and Micros to manage sales and revenue reporting

Staff Leadership and Development

  • Contribute to maintaining appropriate staffing levels across F&B outlets to ensure smooth operations and excellent guest service

  • Assist in recruiting, training, and mentoring team members to uphold service excellence standards

  • Provide on-the-job coaching and performance feedback to develop employees’ skills and confidence

  • Foster a positive work environment that motivates staff to deliver their best and maintain high morale

  • Ensure team members adhere to operational policies, health and safety regulations, and food hygiene standards

Customer Service and Guest Satisfaction

  • Engage with guests during service periods, promoting a hospitable, friendly, and professional atmosphere

  • Handle guest feedback effectively, resolving complaints promptly to ensure high levels of customer satisfaction

  • Consistently strive to enhance the guest experience through innovative F&B offerings and attention to detail

General Administrative Duties

  • Ensure compliance with all health and safety, hygiene, and food quality regulations

  • Participate in monthly departmental meetings and contribute to operational planning

  • Maintain accurate records of departmental operations, including stock levels, staff attendance, and financial reports

  • Assist in preparing reports for hotel management on departmental performance and guest satisfaction
