ROLE OVERVIEW
As a Butchery Production Controller, you will play a vital role in ensuring the efficiency, accuracy, and quality of all meat processing activities. This includes breaking down carcasses, managing equipment use, monitoring cold chain compliance, and coordinating daily production with the team. You’ll also be responsible for team training, quality control, inventory traceability, and upholding hygiene and safety standards across the production floor.
The role requires deep knowledge of meat processing methods, excellent leadership skills, and the ability to thrive in a high-performance production environment.
KEY RESPONSIBILITIES

Break and portion meat carcasses according to specifications

Operate bandsaws, knives, meat grinders, fillers, and mixers with precision

Package, weigh, and price meat products for dispatch

Oversee daily production workflows and task assignments

Train team members on production equipment, safety procedures, and product handling

Supervise product cold chain conditions from receiving to dispatch

Maintain hygiene and food safety standards in work and storage areas

Identify and report defective equipment and assist with equipment care

Conduct quality inspections and implement corrective actions when necessary

Coordinate store orders, product deliveries, and customer queries

Monitor inventory control using FIFO and minimize stock losses

Maintain full traceability and documentation throughout production

Supervise staff attendance, productivity, and timekeeping

Ensure compliance with OHS and food safety systems
QUALIFICATIONS & EXPERIENCE
-
Grade 12 / Matric certificate or equivalent
-
Minimum of 3 years’ experience in meat production or FMCG food processing
-
Sound knowledge of meat preparation, cutting techniques, and equipment handling
-
Previous supervisory or team lead experience in a production environment is preferred
KEY COMPETENCIES REQUIRED

Proficiency in meat cutting, carcass breakdown, and portion control

Strong understanding of cold chain management and hygiene compliance

Comfortable working in cold environments and standing for extended periods

Excellent analytical, leadership, and problem-solving skills

Strong interpersonal skills and the ability to lead, train, and motivate a team

High attention to detail with a commitment to quality and safety

Knowledge of block tests, production planning, and food traceability standards
