Role Purpose:
The Assistant Catering Manager will be responsible for managing daily food service operations in a healthcare setting. This includes overseeing kitchen activities, managing food production processes, controlling food and labour costs, and ensuring compliance with HACCP standards.
Education and Experience Requirements:
- Relevant tertiary qualification in food and beverage services or culinary arts (compulsory).
- Minimum 3 years of progressive/kitchen management experience (compulsory).
- Experience working within budget guidelines to deliver results (compulsory).
- High-volume, complex foodservice operations experience (highly desirable).
- Hospital experience (advantageous).
- Strong knowledge of Health, Safety, and Environment (HSE) practices (advantageous).
- Special diets knowledge (compulsory).
- Must have healthcare experience.
Knowledge, Skills, and Competencies:
- In-depth knowledge of catering environments, ranging from fine dining to restaurant dining.
- Knowledge of South African laws and industry-specific regulations.
- Excellent customer service and management skills.
- Strong communication and leadership abilities.
- Exceptional functional skills in kitchen operations.
- Ability to balance budgets and manage costs effectively.
- Computer literate.
- Knowledge of HSE regulations.
Key Responsibilities:
- Assist with managing daily operations of the assigned unit.
- Help implement production processes and maintain quality standards.
- Assist with managing food and labour costs to ensure efficiency and profitability.
- Ensure overall understanding and implementation of HACCP standards.
- Assist in developing and planning menus to meet healthcare dietary needs.
- Manage kitchen brigade and staff.
- Support the management of both strategic and day-to-day operations of the catering service.
